Whoopie Pies

Can you believe that I just tried a Whoopie Pie for the very first time?  This is my second attempt, the first was a flop. I combined a couple of recipes for this and made them as our “something new Saturday” project.

Whoopie pies:

1 2/3 cups all-purpose flour

2/3 cup unsweetened cocoa powder

1 1/2 teaspoons baking soda

1/2 teaspoon salt

4 tablespoons unsalted butter, room temperature

4 tablespoons vegetable shortening (I just used butter)

1 cup packed dark brown sugar

1 egg

1 teaspoon vanilla

1 cup milk

Mix dry ingredients, add the rest. Beat until smooth and creamy. Drop tablespoon size glops on greased cookie sheet. Bake at 375 degrees for approximately 8 minutes.  Cool on wax paper rounded sides down.

For filling:

1 stick (1/2 cup) unsalted butter, softened

1 1/4 cups confectioners sugar

2 cups marshmallow cream such as Marshmallow Fluff

1 teaspoon vanilla

Beat all together until smooth and fluffy.  I put mine in the fridge to chill a bit so it was easier to spoon onto cakes.
